Cross-pollinating three lists with this question.

Is this paradigm shift happening to you: Do you find youself facing a
2-color job and reconceiving it as a 4-color job?

That is, as you think of the job that will be printed in color, you
begin to escalate from a basic 2-color (PMS and black, typically) to
4-color (CMYK), because (1) digital color is getting pretty
inexpensive; (b) the client wants a companion electronic version (PDF
for the web, brochure repurposed as a PPT, logo for on-screen uses,
etc.); and (iii) some direct-to-plate workflows are 4-c systems.

Or, are you staunchly holding out for Pantone on uncoated stock, with
